The Lielezers bakery was founded in 1991 as a family enterprise with 16 employees. Our products received more and more appreciation and, as of 2009, the bakery has 132 employees organised in three continuous shifts. Our speciality is bread baking using age-old recipes and methods with manual labour. The baking process we follow could not be called innovative or efficient. On the contrary, the slow baking process is not a concern to us and we do not use any enhancers to speed things up. Because this is the only way it is possible to obtain natural, wholesome and tasty bread – bread with an exquisite and rich flavour.
Our speciality is rye breads – the source of strength and energy!
The Lielezers bakery has become one of Latvia’s leading rye bread producers. We are most proud of our real rye bread, baked by age-old methods and recipes and whose value is comparable to the best class cognacs produced from special grape spirits and aged in wood barrels. The scalded dough is prepared and ripened for twenty four hours in our hand-made aspen-tree tubs which guarantee high quality and a unique taste. In order to bake scalded bread, flour of special quality is needed, which we supply from our own mill. No appliances are used to divide and form the rye dough.

The MARIO brand is well known in the Baltics for healthy, natural and light crispbreads. Along with the crispbreads, authentic rye and wholegrain grissini are available, BE GOOD natural crispy breadsticks, and fi nger-licking savoury mini-breadsticks with popular fl avours such as sour cream and onion, cheese and salami. Of course, we also supply more traditional snacks and sweets, such as gingerbreads, all sorts of biscuits, bread rings, puff ed corn, and original hand-made rye bread. Kosher products? No problem!
